I really like ambient music with a general fantasy feeling and lots of folk instruments. I haven't come across anything besides Taur Nu Fuin, but it's really good. Does anyone know anything else that's similar?

Wow - never heard of that band, you've introduced me to some great things today! I'll have to research them more... ...but that reminded me a lot of this, a soundtrack I'm VERY partial to and still (don't laugh) listen to quite frequently. Awesome stuff.
Not to toot my own horn, but I'm a huge fan of this genre as well and this is from music I did æons ago, but re-recorded/remixed/mastered in 2010.

Sorry, didn't mean to hijack this read with my own music. : /
Ran into another band I think is similar. (dark medieval ambient genre at least) Stay with this one... It has a slow but very powerful grip.

I think I know a band for you, you should definately check out the band Nest from Finland. This is one of my favourite bands, they play Neofolk and use a Kantele, an old Finnish string instrument. They're secular, but I haven't seen any offensive lyrics etc. from them. In my opinion, they are a really special band that creates such a great atmosphere with their music, truly amazing. EDIT: I forgot to mention another band: I think Exclamavit could also be a project that fits to the term "Fantasy Ambient"

I think when we're talking about this kind of music, somebody has to mention Satyr's old project Wongraven. So hereby I'm mentioning Wongraven.

Wongraven is interesting. It definitely has some of the same vibes as early Satyricon. I think Burzum and Ulver also should be mention in a ambient tread.

I just found this project from Lord of the Night (the guy from Dark Woods). It sounds really cool.
